Is there a way to make it so my video starts at the highest quality level? When I started it on my course page, it loaded at 120p and looked terrible to start. How do I make it so it loads highest quality first?

Currently, the best way to achieve your desired behavior is to delete the lowest quality level (120p). The player is designed to get the best possible time to first frame. However, we are working on a feature to allow you as the developer to set the first quality level.
